Oat Topping
200g Rolled Oats
230g Wholemeal Plain flour
1tbsp Honey
1tsp Ground cinnamon
170g Reduced fat butter
1⁄2 tsp Salt
1 tsp Nielsen Massey vanilla extract
Apple Filling
5 small eating apples
45g Corn flour
2 tsp Lemon Juice
30g Chopped mixed nuts (optional)
Directions
- 1.Preheat the oven to 180c / 160c (fan). Grease and line the bottom of a baking 30cm x 20cm tin.
- 2.
Place all of the ingredients for the oat topping into a large bowl and mix using a free standing or hand held mixer on a low speed for 1-2 minutes until it is evenly mixed and resembles breadcrumbs.
- 3.
Place 2⁄3 of the oat mixture into the lined baking tray and press down to create a base.
- 4.
Peel and core the eating apples and chop roughly before adding to a food processor with the remaining ingredients for the apple filling. Blitz until the apple is finely diced.
- 5.
Spread the apple filling over the oat mix base.
- 6.
Top with the remaining oat mixture and gently press down. Sprinkle with mixed nuts if desired.
- 7.
Bake in the preheated oven for 30-35 mins until golden.
- 8.
Cut into squares and enjoy still warm or allow to cool.
